Rosettes

2 eggs - beaten very well

2 eggs - beaten very well
1 Tbsp sugar
1 tsp vanilla
1/4 tsp salt
1 cup milk
1 cup flour - sifted
Beat the eggs very well

Wisk everything together adding flour LAST
Heat vegetable oil in a pan to medium - medium-high heat
Put the rosette form in the oil to heat

Dip into the batter and quickly (but carefully) back into the oil
Use the back of a butter knife to help losen any batter that is on the top of the form
Fry until golden then flip & do the same

Drain on a cooling rack with paper towels or newspaper underneath to catch the oil
Once cool sprinkle with powdered sugar
